Christmas Dinner Recipes…plus Happy Hanukkah…plus John and Frank

1. Mix grated raw beets and finely grated almonds.

2. Stir in cream and lemon juice to right consistency.

3. Serve in individual nests of butter lettuce with olive oil and lemon dressing on only the lettuce.


1 bunch watercress
6 heads Belgian endive
1/2 cup olive oil
3 tablespoons wine vinegar
1/4 teaspoon salt
Freshly ground black pepper
1/8 teaspoon paprika
1 teaspoon minced onion

1. Before untying the bunch of watercress, cut off part of the stems to make short sprays. Discard the remaining stems. Untie the bunch.

2. Crisp the watercress sprays and endive in ice water about fifteen minutes before using. Dry gently in paper towels.

3. Cut the endive heads in half lengthwise, beginning at the root ends. Cut into bite-sized pieces.

4. Combine the olive oil, vinegar and seasonings. Mix well.

5. Place the endive and watercress in a salad bowl and sprinkle with the salad dressing . Toss lightly.
YIELD: 6-8 Servings

Attention Songwriters: Enter Your Original ‘Christmas Song’ and Win Exposure!

You have heard these words haven’t you: “Chestnuts roasting on an open fire–Jack Frost nipping at your nose–Yuletide carols being sung by a choir–and folks dressed up like Eskimos” (It is Mel Torme’s “The Christmas Song”). Or–what about: “Have a Holly Jolly Christmas–It’s The Best Time Of The Year” (These words written by Actor/Folk Singer Burl Ives). Or — what about 13 year old Jimmy Boyd saying, “I saw Mommy kissing Santa Clause underneath the misseltoe last night” (Three weeks after Jimmy Boyd’s song was released it was No. 1 on the Billboard Charts, selling 2 million records in fewer than 10 weeks!).

“It is indeed the songwriter who makes the musical world go round” says Renee Ashey Baker. “Without the songwriter, Daryl Hall and John Oates would have been without words or music to their unforgettably enjoyable Christmas video ‘Jingle Bell, Jingle Bell, Jingle Bell Rock’. Right?”

Renee Ashley Baker (a Blogger/Photographer) is hosting this first national “Original Christmas Song’ songwriting contest because (a) She wants to help undiscoverd songwriters and (b) She wants to help undiscovered songwriters….

Renee says, “All of my favorite songwriters are, of course, the brilliant ones like Cole Porter, The Bergmans, Neil Diamond, Barry Manilow, Daryl Hall, Dolly Parton etc etc etc….”

The winners of the “Original Christmas Song Songwriting Contest” will be selected by Renee Ashley Baker. All songs entered will remain the property of the songwriter/copyright holder. There is No entry fee. There is also No cash prize, No promise of publishng, and No recording contract offered. However, Renee has a popular Blog (“About Renee Ashley Baker On WordPress”) that is filled with 40 years of ‘rock music and pop music’. And–who knows when some web surfing ‘talent agent’ might click onto (and enjoy) Renee’s eclectic blogosphere meandersings….

How To Enter?
1. Open a MySpace account if you don’t already have one(You must be at least 17 years of age).
2. Upload to your MySpace Profile Page, a video of yourself singing/playing your ‘Original Christmas Song’.
