NYE PARTY RECIPES: “Oysters Rockefeller Renee” and “Renee’s Pink Champagne Punch”

RECIPE 1: OYSTERS ROCKEFELLER RENEE (When Served With Pink Champagne)

24 oysters on the half shell
1 cup butter
1/3 cup finely chopped parsley
1/4 cup finely chopped celery
1/4 cup finely chopped shallots or scallions
1/2 small clove garlic, finely minced
2 cups chopped watercress
1/3 cup chopped fennel
1/3 cup fine, soft bread crumbs
1/4 cup anisette or Pernod
Salt and freshly ground black pepper to taste

1. Preheat oven to hot (450 F)
2. Fill four tin pie plates with rock salt and
arrange six oysters on each.
3. In a skillet heat the butter, add the parsley,
celery, shallots and garlic and cook three minutes. Add the watercress and fennel and cook until the
watercress wilts, about one minute.
4. Pour mixture into the container of an
electric blender and add the remaining ingredients.
Blend until the sauce is thoroughly pureed,
about one minute. If a blender is not available, ut the ingredients through a food mill or pound in a mortar.
5. Place one tablespoon of the sauce on each oyster and spread to the rim of the shell. Bake the oysters just until the sauce bubbles, about four minutes.
6. Serve immediately with Pink Champagne.
Yield: 4 Servings

RECIPE 2: RENEE’S PINK CHAMPAGNE PUNCH (When Made With Pink Champagne)

6 lumps sugar
Dash of bitters
1 cup high-quality cognac
3 bottles chilled Pink Champagne

1. Place the sugar lumps in a punch bowl. Sprinkle with bitters and add the cognac.
2. At serving time, uncap the champagne and add to the bowl. Add ice. If desired, decorate with fruit.
Yield: 20 Servings

The Parents Menu:
A tray of Monte Cristo sandwiches 2. A Swedish Glogg (made with Red Wine)

RECIPE: DELI MONTE CRISTO SANDWICHES
4 slices rye bread
4 thin slices deli ham
2 thin slices deli turkey
2 tablespoons deli coleslaw
2 tablespoons Thousand Island salad dressing
2 slices Swiss cheese
2 eggs

On two slices of bread, layer a slice of ham and turkey, coleslaw, salad dressing and cheese. Top with remaining ham and bread. In a shallow bowl, whisk the eggs. Dip both sides of sandwiches in eggs.
In a nonstick skillet coated with non-stick cooking spary, cook sandwiches over medium heat for 2-3 minutes on each side or until bread is toasted and cheese is melted.
Yield: 2 servings

RECIPE: SWEDISH GLOGG (with Red Wine)
3 1/2 cups water
1 tablespoon whole cloves
1/4 teaspoon ground cardamom
2 (3-inch) cinnamon sticks
2 (750-milliliter) bottles dry red wine
1 cup raisins
1 cup sugar

Combine first 4 ingredients in a large saucepan; bring to a boil. Reduce heat; simmer 20 minutes.
Strain liquid through a sieve into a bowl, discarding cloves and cinnamon sticks. Returns liquid to saucepan. Stir in wine, raisins, and sugar, and cook misture over medium heat just until sugar is dissolved and mixture is thoroughly heated. Serve warm.
Yield: 18 servings (serving size 1/2 cup)
Note: Nonalcoholic dry red wine may be substituted for regular wine, if desired.

RECIPE: HALLOWEEN JELLO PARFAIT
Jello Brand Gelatin Orange (for 20 children)
Cool Whip Whipped Topping Vanilla (for 20 children)
Food Coloring in Black (to color Cool Whip)

1. Prepare Jello in large bowl (and refrigerate till chilled)
2. Color Cool Whip (with food coloring and a large spoon)
3. Alternate Jello and Cool Whip ( in ‘tumblers”)
Serve With Orange and Black Spoons
Yield: Serves 20 children

PRODUCT: A MINE SWEEPER/MINE DETECTOR (CALLED “ReMiDe”)

PRINCIPLE: A Land Mine sweeping/ Land Mine detection “device” that would operate via remote control (just like the military’s unmaned missile-armed drones).

TECHNOLOGY (MECHANICS): A mini (12-inch round) “saucer shaped” hovercraft (“ReMiDe”) that would be armed with a “metal detecting radar technology” or a “metal reading/viewing software”.

2. My mini “saucer shaped” hovercraft (“ReMiDe”) would float, gravitate (travel) above the ground much as a “Robovac” travels along the floor–exploring and sweeping–in a “grid”.

3. Once the “location” of a “Land Mine” is detected a “destroyer rover” (WILLIS) is then sent to “destroy” the “Land Mine”.

CAN YOU HEAR ME NOW SKUNK WORKS ? (Hughes Aircraft personnel? Lockheed Martin ?)

REMEDY:
The name “ReMiDe” is an acronym (and an anachronism) for “RENEE MINE DETECTOR” …. (I named my invention after myself….).

I was influenced by the Japanese Company “Geosearch” and I was influenced, of course, by Princess Diana and her cause to “find and destroy” MINE FIELDS….
